La Sazón

Strategically located in the heart of the Tlalpan borough, this establishment combines the family gastronomic heritage of Mexican recipes with a nocturnal offering focused on bohemia and acoustic music. The venue occupies a space on the esplanade of the Plaza de la Constitución, offering a gastronomic refuge for those seeking to escape the frantic pace of commercial restaurants and bars. The interior atmosphere is designed for romance and table confidences, using warm lighting from candles or low-filament bulbs to frame the wooden tables.

The venue’s culinary proposal is based on an extensive generational legacy that began in the sixties with the recipes of the business’s founder, great-grandmother Doña Elena. Through the decades of the restaurant’s operation, the processes of Mexican cuisine passed hereditarily through the hands of the family matriarchy until reaching the direction of the current chefs, ensuring that the dishes served maintain a rigorous attachment to the traditional ingredients and flavors of the country.

The gastronomic operation of the place is divided to cover different public profiles according to the time. During mornings and afternoons from Monday to Friday, the space serves a Mexican food buffet that rotates dozens of different recipes throughout the month. On daytime weekends, the offer adds heavy preparations such as carnitas, slow-cooked barbacoa, and mole Sundays with chicken. However, at nightfall, the format changes to a formal à la carte dinner service, allowing diners to order direct portions.

The sound section is the indivisible complement to the nocturnal à la carte dinners. The restaurant programs performances by live trova and acoustic guitar singer-songwriters every night. Performers set up their equipment a short distance from the main tables, playing ballads, trova, and Latin American songs at a volume that accompanies the tasting of the dinner without saturating the acoustics of the dining room or interrupting dialogues.

To accompany the acoustic concert and the experience of the nocturnal dishes, the establishment’s bar dispatches functional options, without elaborate mixology. Customers order cold bottled beers, pitchers of agua fresca with seasonal fruit, glasses of red and white wine, or shots of basic national spirits like tequila and mezcal. The focus lies in providing liquid accompaniments that pair correctly with the home-style seasoning and the unhurried compass of the bohemia.
